Mushroom Pesto Orzo
6 oz mushrooms sliced
¼ cup dry white wine *
2 ¼ cups vegetable broth or water (I use a combination of both)
4 tsp. vegan pesto
1 cup uncooked orzo
4 oz baby spinach
Sauté mushrooms in a medium sized pot over medium heat ** until mushrooms become soft. If using wine add this in next and cook off alcohol. Add broth or water and pesto to the pot and bring to a boil. Add in orzo and cook at a low boil for about 15 minutes or until orzo is tender. When there is 2 minutes left in the time stir in spinach to wilt.
Serve with additional pesto and fresh herbs if you are feeling fancy.
Serves 2-3 people as a main dish.
*This is optional. I usually only add wine if I already have a bottle already opened.
**You can sauté in vegan butter or oil. I usually dry sauté my mushrooms since store bought pesto generally has a lot of oil in it.
