Tangy Fat Free Baked Beans

Whenever I scroll through my Instagram feed, which is much more than I care to admit… I often see pictures of people eating baked beans or putting baked beans on toast. I was never really a baked bean fan- I thought they were always too sweet and those little chunks of fake bacon in the cans really grossed me out. Alas! After seeing tons of pictures of delicious looking vegan baked beans, I decided to create my own recipe that was of course meat free and not super sweet like some of the canned varieties I have encountered. This recipe is naturally fat free (I do not use oil), an added bonus for most people, which means you can enjoy these totally guilt free and fill up on those tasty avocados for fat instead!

INGREDIENTS
1- 15oz. can navy beans, rinsed and drained
1- 15oz. can northern beans, rinsed and drained
½ cup onion, diced
¾ cup water
2 ½ Tbsp. ketchup
1 Tbsp. + 1 tsp. coconut sugar or brown sugar
1 Tbsp. tomato paste
1 tsp. smoked paprika
½ Tbsp. yellow mustard
1 Tbsp. apple cider vinegar
½ tsp. chili powder
salt & pepper to taste

DIRECTIONS
Combine all ingredients except for salt and pepper in a medium saucepan over medium-high heat. Bring beans to a boil, then lower to a simmer and cook on low for 50 minutes stirring occasionally. When finished add salt and pepper to taste.

Serve on toast, with potato wedges, or by themselves!
