Two Easy Vegan Sushi Fillings

I love sushi- how sushi rice is sticky and a little sweet and sour and how perfect the flavor of nori fits into the equation. My absolute favorite roll to order at restaurants was always spicy tuna, so I decided to create my own vegan take on that roll and created a spicy edamame filling that crushes my cravings for a spicy tuna roll. Below I have written out instructions for my spicy edamame roll and for a BBQ tofu roll. Both are easy, vegan, and a deliciously cheap way to satisfy your sushi cravings!

Spicy Edamame Sushi Filling

INGREDIENTS
¾ c. shelled edamame, defrosted
1 Tbsp. vegan mayo
1 Tbsp. sriracha

DIRECTIONS
Combine all ingredients in a food processor and pulse until the mixture is combined, but still has a somewhat “chunky” texture.

Makes enough for 2-3 rolls.

Add cucumber & carrots for some crunch!

BBQ Tofu Sushi Filling

INGREDIENTS
½ block of firm tofu, drained of excess water
2 Tbsp. ketchup
½ Tbsp. soy sauce
½ Tbsp. sriracha
½ Tbsp. rice vinegar
1 Tbsp. coconut sugar
½ tsp. ginger powder
¼ tsp. garlic powder

DIRECTIONS
Preheat oven to 375°F.

Combine ketchup, soy sauce, sriracha, rice vinegar, coconut sugar, ginger powder, and garlic powder in a small bowl. Whisk until thoroughly combined.

Cut tofu in 6 slices lengthwise. Place on baking sheet greased or lined with parchment paper. Spread BBQ sauce over topside and place in oven. Bake for 10 minutes. Take out of oven and flip tofu. Spread BBQ sauce over topside and place in the oven. Bake another 10 minutes. Flip once more, spreading more BBQ sauce if you desire. Place bake in oven and cook 10 more minutes. Let cool then slice into thin strips.

Makes enough for 4 rolls.

Add carrots for crunch and green onion for more flavor!
