Sweet + Tangy Peanut Sauce

One of my favorite and easy “go-to” meals is to make this peanut sauce, chop up some mushrooms and bok choy, bake some tofu, and enjoy over rice noodles. This sauce takes about 5 minutes to make and doesn’t contain any hard to find ingredients. I don’t particularly like overly sweet Asian sauces and I feel like this sauce has a nice balance between sweet, creamy, and tangy!

2 Tbsp. creamy, all natural peanut butter (softened, if it has been in the fridge)
1 Tbsp. soy sauce
½ Tbsp. brown sugar or coconut sugar
½ of a lime, juiced
1 ½ tsp. sriracha
½ Tbsp. water
1 tsp. rice vinegar
¼ tsp. garlic powder
¼ tsp. ginger powder

Combine all ingredients in a bowl and stir to combine.

Serve over rice noodles, use as a dipping sauce for summer rolls, or use as a stir fry sauce!

Makes about ⅓ cup of sauce, about 2 servings.
