One Pot Apple Pie Oats
I used to hate oatmeal. I hated it’s gloppy, watery texture and the fact that I had to put about a cup of brown sugar in there to make it even remotely palatable. It wasn’t until many many years later that I discovered that you could make oatmeal taste pretty darn amazing. I don’t know who originally turned me onto cooking fruit with my oats, since a lot of people do it, but it changed my whole world. I went from being an oatmeal hater to eating it 4-5 times a week.
I started off relatively simple, only adding in a ripe banana while the oats cooked and later took on more extravagant ideas such as the recipe I am sharing with you today. This recipe is by no means complicated, but it does require a little extra time and effort, but it’s worth it. I challenge everyone out there who hates oatmeal to try this because it just might change your opinion!
For the apples:
2 apples, cut into bite sized pieces
2 Tbsp. real maple syrup
½ tsp. cinnamon
Pinch of nutmeg
For the oats:
1 cup rolled old-fashioned oats
1 ¾ cup unsweetened plant milk
1 tsp. vanilla extract
½ tsp. cinnamon
In a small to medium sized sauce pan over medium heat add in apples, maple syrup, ½ tsp. of cinnamon and the nutmeg. Bring to a low boil, then cover and reduce to a simmer. Cook for about 15 minutes or until apples are soft.
Add in oats, plant milk, vanilla and the rest of the cinnamon. Bring to a low boil, then reduce to a simmer. Cook 8-10 minutes uncovered or until most of the liquid is absorbed.
Top with additional cinnamon, pecans, and hempseeds!
Makes 1-2 servings, depending on how much oatmeal you can put yourself.
Additional note: The recipe above “for the apples” also makes for a delicious applesauce that can be eaten as is or blended.
