Vegan Nacho Cheese

This nacho cheese recipe has been in the works for me for quite some time & I finally nailed it! It is dairy free(obv), nut free, seed free, oil free, gluten free, etc. so what is it made of you ask?? OATS, oats blended with vegetables, spices and then heated on the stove until thickened. This method of nacho ‘cheesery’ (yes I just made that word up) provides the PERFECT nacho cheese texture reminiscent of that junky nacho cheese from baseball games.

I have eaten this cheese over tortilla chips, in burritos on fries as ‘cheesy fries’ and let me tell you it’s good in all applications. Feel free to change the spices used as this nacho cheese comes out a bit spicy!

INGREDIENTS
⅓ cup of oats(gluten free, if gluten free)
½ red bell pepper, roughly chopped
1 ¼ c. water
2 T. nutritional yeast
½ T. liquid aminos or soy sauce
juice from ¼ of a lemon
½ t. onion powder
½ t. garlic powder
½ t. salt
⅛ t. cayenne pepper

DIRECTIONS
Combine all ingredients in a high-speed blender and blend until smooth. Pour into a small saucepan over medium high heat and bring to a boil. Lower heat to a simmer and whisk continuously until sauce has thickened (~1-3 minutes). The sauce will thicken more as it cools so don’t let it get too thick on the stove.

To reheat, add a bit of water, stir and reheat, whisking continuously.

Serve over anything and everything ☺

Makes approximately 1 cup of nacho cheese.
